LEGUMES AND SEEDED VEGETABLES
Legumes are of high importance to human food sources and they contain more protein than any other vegetables. They have been cultivated and used for food for centuries world wide. The low water content and impervious seed coats enhance their value for long term storage and increase their longevity. Legumes are easy to grow, mature very quickly and are very nutritious. As well as protein legumes contain minerals and vitamin B making them essential in a vegetarian diet.
